Soups On

There's not much I love about the cold winter, but delicious, hot, steamy soup is definitely a perk of this dreary season. Here is one the boys requested for dinner tonight:

French Bread Pizzza Soup from Taste of Home "Heartwarming Soups"

2 cans diced tomatoes (I like DelMonte Petite Cuts)
2 cans Campbell's tomato soup
3 1/2 c water

Bring this to a boil, reduce heat, simmer, and cook for 15 minutes. Mash with a potato masher.

Add 3 1/2 oz pepperoni slices quartered, 1 each red and preen peppers chopped, 1 cup sliced mushrooms, 4 cloves garlic minced, 1/2 t sage, 1/2 t oregano, 1/2 t basil.

Cover and simmer for 10 minutes or until veggies are soft.

Laddle into oven-safe bowls. Top soup with a slice of toasted french bread and shredded mozzarella cheese. Broil until cheese is melted and bubbly.
